Yeast management

The well-proven Steinecker systems for yeast propagation and yeast vitalisation guarantee optimal yeast treatment. Aeration with the Steinecker Air Injector that reaches an output of 50 – 10,000 hl/h provides high propagation rates and very energetic yeasts.

Yeast aeration with the Steinecker Air Injector

  • The extremely fine distribution of sterile air through special aeration nozzles quickly saturates the wort with oxygen, discharges cool trub particles, reduces the foam volume during aeration and treats the yeast cells gently.

Yeast propagation

  • In two separated cylindroconical stainless-steel tanks, the wort is first sterilised (if required or necessary) so that the yeast propagation process is independent from the brewhouse processes.
  • Heating and cooling surfaces in the steriliser allow the wort to be brought to the required propagation temperature after sterilisation.
  • In the second tank – the propagator – a controlled cooling unit keeps the process temperature that is optimal for yeast propagation at a constant level. With the air injector, propagation rates of 120 million cells/ml, with an initial cell count of 5 million yeast cells/ml, can be achieved.

Yeast storage

  • The stored yeast is vitalised using the combination of the external aeration system Air Injector and a yeast vitaliser with yeast spreader.
    The spreader in the yeast storage tank distributes the returned yeast in the tank as a thin film. This procedure safely extracts the CO2 from the yeast and prevents foaming during transfer between tanks and aeration.
