Merlin wort boiling system for Mexican brewery
Utilising state-of-the-art Steinecker technology, Cervecería Cuauhtemoc-Moctezuma S.A. de C.V. in Monterrey, Mexico, has modernised the brewhouse of its facility in Guadalajara. The new brewhouse features two lines for 20 brews a day, comprising a new malt feed system and a new grist mill. The brewhouse has additionally been equipped with two ShakesBeer mashing systems and two new Pegasus lautering systems. As part of this modernisation project, Cervecería Cuauhtemoc-Moctezuma also commissioned a new Merlin wort boiling system.
Characteristic features of the Merlin system include a large evaporation surface, an efficient heat recuperation and heating system, and the efficient use of energy. A frequency-controlled pump feeds the wort to the heater where it flows in a thin film over the conical surface. During this process, the wort is heated, boiled and stripped. Guidance and heating of the wort is performed at a rate of five to six circulations per hour.
As an alternative, breweries can use the Krones Stromboli internal boiler system which can easily be retrofitted to existing internal boilers, featuring a minimum thermal load on the wort, which is achieved with gentle heating procedures and reduced overall evaporation.
